Pure Chablis: One Grape/One Region/One of a kind.
Firstly, very excited to be able to attend Chablis Scholar Series Masterclass in partnership with Hispanics in Wine at Vin Sur Vingt Nomad. May Matta-Aliah , Bourgogne Wine Official Ambassador, did such a good job to explain Chablis in depth in such a short time period (Deeper than D3).
My takeaway:
1. Petit Chablis is very different from Chablis and didn't mean it's small or secondary to Chablis. I think Abe Zarate made a very good point when he said think g Chablis as UES and petit Chablis as Williamsburg. They are all premium neighborhoods but have diff vibes.
2. Chablis: just different from another chardonnay. Isnt it? The razorsharp acidity that will make your mouth watery, the mineral and wetstone notes will hit you right after you pick up the lemon and granny smith apple. Even some producers choose to go through Malo, it will not change the identity of Chablis. From the sip one, you know it is Chablis.
3. Premier Cru vs Chablis: for me, the main difference came from the finish. Even Young Premier Cru has longer, more mineral and lime finish. On top of that, the wine is more concentrated and structure.
4. Grand cru is a different beast: the usage of oak added vanilla, butter notes and give the wine fuller body. When time pass by, the oak notes will be more integrated with mineral, citrus notes and bright high acid. The wine designated to be aged.
